One thing I love about Taco Riendo is that dishes are prepared without the standard amount (that is, overload) of cheese we see at many other American-Mexican restaurants. Thus, we can actually enjoy the flavors of the dishes. And we don't feel so weighed down afterwards. I've never been to Mexico, but the tacos and other fare I've been served in Costa Rica and Ecuador (completely different countries, I know) have been bare of cheese. Dare I suggest that Taco Riendo is a little more authentic than you're used to? I don't know--it's just a thought! Give it another try, and add some different flavors from the salsa bar if the dish seems too plain.
